Why Beet? The Story Behind Apollo Nova

Every distillery has an origin story. Ours involves a stubborn idea, a lot of skeptical friends, and a conviction that the most local crop we had was worth taking seriously.

Apollo Nova didn't start with a business plan. It started with a question nobody could answer to our satisfaction: why does almost every spirit come from somewhere else?

Whisky needs barley. Tequila needs agave. Rum needs cane. All of it shipped, imported, or grown far from where we live. We kept wondering what a spirit made entirely from what grows here would actually taste like.

The obvious crop nobody used

The answer was sitting in the fields all around us: sugar beet. Grown for centuries, abundant, efficient — and almost never distilled into anything anyone wanted to drink. That gap was the whole opportunity.

“Half our friends thought it was a joke. The other half wanted to know when they could try it. We built the distillery for the second half.”

Naming it

The name came late. Apollo for the sun the beets grow under; Nova for something new made from something old. Together it sounded like what we were trying to make — bright, clean, and a little bit out of nowhere.

Where we are now

A few years on, the skeptics have mostly come around. The spirit has found its people, the cocktails have found their menus, and the field still sits a short walk from the still. This Journal is where we'll share the rest of it — the craft, the harvests, the drinks, and the occasional honest misfire.
